Cheese Blintzes

"These light and delicate blintzes are filled with a creamy cheese mixture and just the right touch of sweetness. Make these for a classic Shavuos favorite, or as a sweet treat just because!"

1 dozen Meant To Be eggs

¾ cup milk

¼ cup wheat flour

5 tbsp sugar

Cheese filling:

16 oz cream cheese

16 oz cottage cheese

8 oz farmer cheese

½ cup sugar

½ cup confectioners’ sugar

Instructions:

  • In a bowl, whisk together eggs, milk, flour, and sugar until smooth.
  • Heat a nonstick pan and pour in a small amount of batter to form a thin crepe.
  • Cook each crepe until set, then remove from pan. Repeat until all batter is used.
  • In another bowl, mix all the cheeses with both sugars until smooth.
  • Place a teaspoon of filling in the center of each crepe. Fold or roll to close.
