Chinese Guo Kui

"A healthier take on the popular Chinese street food Guo Kui. A thinly rolled dough filled with a spicy scallions and scrambled egg filling, fried and baked to perfection! Pair with a hearty salad for the perfect 9 days meal. Healthy, robust, flavorful and fragrant, now made better with Meant To Be eggs. "

Ingredients:

Dough:

2 c. + 2tbsp flour

1 ½ tsp yeast

1 tsp salt

1 tsp sugar

3/4 cup water

1 tbsp oil

Filling:

3 Meant To Be eggs

1 tbsp oil (for scrambling)

1 clove garlic

1/4 tsp black pepper

1/4 tsp red pepper flakes

Pinch of white pepper

1 tsp sugar

½ tsp salt

3 scallions

½ tsp soy sauce

½ tsp water

Instructions

Dough:

  1. Mix all ingredients until a soft dough forms

Filling:

  1. Heat 1 tbsp oil in a skillet and scramble the eggs. Remove eggs from skillet and place into a bowl.
  2. In the same skillet, fry the garlic with black pepper and red pepper flakes for 2 minutes. Add to the eggs
  3. Add the remaining filling ingredients and mix well to break up the eggs

To assemble:

  1. Divide dough into 6 parts and roll each part into a 8×4 rectangle.
  2. Spoon filling down the center of each rectangle, leaving clean edges
  3. Fold in the sides, roll up, and flatten into a 3-inch round disc, about 1 inch high.
  4. Fry each disk for 3 minutes each side, then bake at 400°F for 10 minutes.
