Organic Artisanal Cream Cheese

"Cream cheese is one of my favorite foods. Since I changed my lifestyle to organic only, I stopped eating cream cheese, being it wasnt good for me. When I discovered this recipe, i jumped in, wishing to create this cream cheese in an organic way. So I did. And Man is it good!!"

Ingredients:

1 liter Meant To Be milk

3 tbsp. freshly squeezed lemon juice

Pinch salt

Instructions:

  1. Pour the milk into a medium-sized pot and cook for 7-10 minutes
  2. Pour in the lemon juice, then shut the flame.
  3. Let the pot sit for 15 minutes, until the milk curdles.
  4. Place a cheese cloth over a medium-sized bowl and spill contents of the pot into the cheesecloth, preserving the milk whey in the bowl.
  5. Place the cheese curds that remain in the cheesecloth into a blender and add a pinch of salt. Blend until smooth.
  6. As you blend, add a bit of the milk whey from the bowl until the mixture has become smooth and has your desired cream cheese texture. Enjoy!

Notes:

My dream was to make an organic imitation of cream cheese. Regular processed cream just doesn’t sit well with me. All Meant To Be products feel so good for me. Using Meant to be organic dairy products makes me feel happier,and healthier. So this recipe lets me create an organic product of my own, using Meant To Be milk to create an organic cream cheese that tastes delicious.
